One handed perks are very limited though. The only one handed perks you really need are the Bladesman and standing power attack one. Sword and Shield is more dangerous than 2H in the long run though. A normal shield bash can stun a dragon quite a bit, power bashing can disarm even Druagr Deathlords, and Shield Charging knocks over the fleeing.

Although Nords get a bonus to One handed, block, and smithing. They also get a bonus to my favorite armor type, light. Beef, stew, Horner, stew, venison stew, and vegetable soup will provide you with all the stamina you'll ever need for shield bashing and power attacks as you only need 1 stamina to do this. Restoration (for healing and stamina) Alteration (for the Magic resistance perks) Lots of health, a fair amount of Stamina and bare bones Magicka for healing.

Shield Shield of Solitude - The highest enchantment strength regarding resist magic and block fortify skill you can find. Spellbreaker - Will negate incoming magic damage to a degree when blocking. Auriel's Shield - Stores incoming damage up to 5 stages. At lower stages you'll stagger opponents for awhile longer.
